Golden Sauce Roasted Potato, Onion and Pepper Salad

This vegetable medley is fast and tasty. It can be served alone or beside any protein. Try it with Sausage, Chicken, Beef or Tofu. ┬áIt’s preferred in this household over rice, but would be great with toasty oversized croutons for a twist on Panzanella.

You’ll Need:

Tortured Orchard Golden Sauce – 2 to 4 Tbsp

Red Potatoes – 1 Lb, medium dice

Onion – 1 Sweet, rough chop

Peppers – 3 (red, green, yellow) or you can keep it one color , medium dice

Salt and Pepper

Extra Virgin Olive Oil/ Canola Oil

Cookie Sheet lined with foil

Oven

*Preheat your oven to 450 degrees while your washing, chopping and prepping your vegetables.

* On your foil lined cookie sheet spread your cut vegetables evenly and sprinkle with the Olive Oil, season with salt and pepper.

*Roast about 20 minutes or until your Potatoes are cooked through but firm and your Onions and Peppers are soft

* Once your vegetables have cooled enough to handle transfer them to your serving dish and drizzle with Golden Sauce.
